Phriday Phood from Carolina!

Sitting on the deck, looking out at the Blue Ridge Parkway, filled, formulating plans for the day, and as my friend Dave says, livin' large!  But of course, it is Friday, so...here's a little ez lunch!  Enjoy and know you are loved!

Curried Chicken Salad
cooked chicken
1/4 cup chopped onion
1/2 cup chopped celery
3/4 cup mayonnaise
1 tsp. curry powder
Chop chicken into small bite-size pieces.  Add onion and celery.  Mix mayo with curry powder and add to chicken.  Chill 2-4 hours to allow flavors to blend.  Serve with fresh bread, in a melon round, or stuffed in sweet baby peppers.
